In our Autumn newsletter we featured this wonderful Pumkin Soup Recipe:
900g of pumpkin flesh, cut into cubes
1 large chopped onion
1 large potato, peeled & cubed
1-2 cloves of garlic, crushed
1 flat teaspoon of mild curry powder
1 bay leaf
salt and freshly ground pepper
3-4 cups chicken or vegetable stock
1 tablespoon sunflower oil
Boil the pumpkin cubes and bay leaf in some water until tender.
In the Staub cocotte sweat the chopped onion in oil until soft, then add the crushed garlic.
Mix in the curry powder and stir.
Pour in the cooked pumpkin and add the potato cubes, stock and salt & pepper and simmer until cooked. Blend to a creamy consistency and serve with warm crusty bread rolls.
